November continued undocumented...

Busy, busy, madness. Everything seems to have got away on me a little recently, so here is a very big blog to summarise the month of November.

With a little more knowledge on board and the weekly market panic slowly becoming easier I've been looking at savoury items to bake. Fruits are slowly starting to ripen, but at this stage there is still only citrus - so being able to use veg from the garden is good. This is a potato and fennel tart - fennel from our garden, potato is not. These were just some leftover new potatoes from the night befores dinner that I slices up. I had to very finely slice the (rapidly bolting) fennel and I slow braised it with garlic, chilli and fennel tops. - All this laid out prettily on what turned out to be decidedly average short pastry. ( I have mastered the short pastry now, will explain further down).

Another thing that we do have in November is Strawberries - not a lot but enough for me to play with and think I'd like to plant more for next season. I just made these little Strawberry, custard tarts as a little experiment with excess ingredients - and because there was nothing for afternoon tea.

This new product, sprouted from the above tarts because the Organic Apple seem to have disappeared entirely - therefore Apple Pies and Apple Danishes are off. I replaced the danishes with a dried fig version and I really wanted to add in another tart. I managed to do this with our own strawberries with a good choice of display (quarter strawberry per tart) These are images of Market #3 (22nd Nov.) it seems market#2 was undocumented.







At this point I had started making 4 batches of Danish, 2 of Sweet pastry and the miscellaneous cakes and biscuits - making up to 200 units varying between $1-$4. Product line consisting of:

-Strawberry Custard Tartlettes
-Financiers
-Rhubarb and Almond Tarts
-Walnut and hazelnut Tarts
-Biscotti
-Pain Chocolat
-Danishes (Fig or Apricot)
-Pain au Raisin

i purchased a few of the delights you had on offer last staurday and only have one thing to say... EXQUISIT!!
