Mulberries and Strawberries... How thrilling.


I had a batch of Puff pastry which I had frozen - part experiment, part bad time management save.


Any way I got it out of the fridge about 36 hours in advance and defrosted it in the fridge.
I cut it into four sections and rolled each piece into as big a rectangle as I could manage without it getting too thin.

(Putting in the fridge what I wasn't using as I worked) I lined a dozen hole mini muffin tin, cut out 6 circles for small galettes, rolled a log of Pain aux Raisin and two delicious Pear and Chocolate tarts (which I unfortunately didn't photograph)





I think they are particularly pretty but Ryan said the pastry tasted a bit old so I'm not sure whether I haven't quite got the knack with Puff pastry yet or if freezing is a bad idea.
But know I have a few more ideas and designs trialled which is very good.

Ok well now I am really hungry and really want some of those goodies to go with my morning coffee…….I am not going to read this blog anymore first thing in the morning…:)
I don’t see why you cannot freeze your puff pastry after all us lazy people buy it frozen all the time. I think you just need to carry on and keep trying and you will get it right.
